Lancashire Hotpot Recipe

Ingredients: to serve 4

3lb Lamb Neck Chops
1 Large Onion
1/2lb Carrots
1 Leek
4lb Potatoes
Seasoning

Method:

In an oven proof Stock pot fry the neck chops a few at a time in a bit of oil. Take them out and leave to oneside.
Fry the finely chopped onions until soft, add the diced carrots and leaks then the potatoes.
Season well with salt & pepper and add a few herbs (Parsley, Thyme etc).
Add a bit of water and stir well.
Place the neck chops on top and cover.
Put in a pre-heated oven for 3-5 hours on about 120.
Turn the chops from time to time.
Serve with Mint Sauce, Brown Sauce or Ketchup :)

The Clay Shooting continues............

At 7am (on a Sunday morning!) Phil and Seb set off again (this time without me) to go to 2 new shooting grounds.

They need to get 3 authorised shoots in before the end of March and a further 2 before the end of April. This will then give them the classification score that they need to enter Clay Pigeon Shooting competitions.

Today they have gone to Doveridge and Kingsley Moor (also perhaps going to Catton Hall).

Last week they did ok but it is all still a learning experience for them both.

During the week they had a lesson at Coniston Shooting Ground in North Yorkshire, a beautiful setting and really nice people. The shooting lodge is fantastic!

Fingers crossed they do well but there are so many good shots out there.

Website

Hi,

Has been rather quite recently what with work etc. The 'boys' are off clay shooting tomorrow to a new ground in Staffordshire and I am going along for the ride, early start though for a Sunday :(

I have been developing my website www.bavarian-mountainhound.co.uk and have just added some stock from Amazon. There are books, shooting glasses, some clothing and ghyllie suits!

Take a look.

Website is still in its infancy and I am proud of it, especially as I have very limited website experience!

Easy Venison Loin Recipe

This recipe produces the most fantastic pink venison!

Make sure Venison has been properly hung, ideally 7 days at 2 degrees.

Trim the loin to get rid of sinew and any 'silver' skin.

Rub with olive oil and season.

Place in a very hot non-stick frying pan and cook on all sides until brown total time about 5-6 mins.

Place loin on an oven tray and place in oven pre-heated to 180.

Leave in oven for 12 mins, then take out and leave to rest in a warm place for 10 mins.

Whilst resting, deglaze the pan with some red wine and add some red-current jelly, stir until reduced.

Serve the Loin sliced on a bed of mash potato with the red wine reduction spooned over. Delicious!

A brief introduction

Hello to you all!

Firstly let me tell you a little bit about myself, I am married to Phil and have been for quite a few years (or should I say a lot!) we have 2 children, Charlotte who is 18 and at University and Seb 14 at Secondary School.

We live in a Victorian Terraced house in a medium sized village in a beautiful area in Lancashire.

We have 4 dogs, Labrador (Finn), Springer (Skye), Jack Russell (Pru) & Bavarian Mountain Hound (Casca). We also have a horse Rosie who is currently away on loan.

Well, just as I think that after the 1st of Feb that is it for the Pheasant Shooting and all associated with it. I have been informed today that the catching up of the hens will be commencing in about 3 weeks. (For those that you don't know, this is when hen pheasants are caught in special cages and then transported to a breeder where they lay eggs). Unfortunately, this means trips 2 or 3 times a day to the shoot to collect them.

Also less than a week after the end of the season (and it must seem like a long time till the start of the next) today I got 'invited' to go clay shooting with the boys! Only when I got there I found out it was my job to press the button when 'PULL' was shouted, to mark their score cards and carry bags! By the time we arrived home, walked dogs and sorted out for school and work etc the day has nearly gone.

Seb got a ghillie suit for xmas and is desperate to try it out in the better weather along with his survival kit (budding Bear Grylls!). He has mastered using his flint and can't wait for drier weather.

The bavarian is nearly 1 and is coming along well in her training, their natural ability is amazing! Her registered name is Zerno Celestine and we got her from Mark & Alison at Paintandpins.co.uk.
